Saint Guilhem, medieval warrior and cousin to Charlemagne, laid down arms to found an abbey in the Gellone valley. The Protected Geographical Indication bearing his name today is home to some grape varieties native to other wine regions. Our Cabernet Sauvignon, planted in 1983, produces a concentrated wine with notes of red fruit and sweet spice. Serve between 16 and 18°C accompanied by filet mignon en croûte, lamb tagine or moussaka.
