Saint Guilhem, medieval warrior and cousin to Charlemagne, laid down arms to found an abbey in the Gellone valley. The Protected Geographical Indication bearing his name today is home to some grape varieties native to other wine regions. Our Chardonnay, planted in 1987, produces a richly-structured wine with hints of apricot and exotic fruits. Serve between 10 and 12°C with veal blanquette, leek pie or fish in a sauce.
