Pale yellow, the complex nose reveals lemony, tangy and mineral notes as well as strawberry leaf-tip. On the palate it is first fresh and delicate from citrus fruits; then, as it opens out, it hints at thyme, saltiness. This wine, balanced by faint woody notes, gives an initial insight into the character of our terroir. To pair with fish baked in fennel, grilled cuttlefish or to enjoy side by side with hard cheese.
“Capion, says Claude Gros, is an extraordinary white wine terroir. This, the second white of the estate, is whole-bunch pressed and give 10-15% barrel fermentation. A distinctively southern, aromatic scent. On the palate, the wine is fresh and lively.”
