Wines of AOC Terrasses du Larzac, Languedoc: a perfect combination of freshness and finesse. Nestled below the Causse du Larzac, the Terrasses du Larzac, for a young Appellation Origine Contrôllée (AOC), is remarkable for its very different terroirs and the quality of the wines produced. AOC status is for the red wines made here. There are five permitted grape varieties: Grenache, Syrah, Mourvèdre, Cinsault and Carignan. The wines must be blends, to include at least two from Grenache, Syrah and Mourvèdre. Furthermore, cellar-ageing should last at least one year. The alcohol content in the bottle must exceed 12% ABV.
The leitmotiv of Terrasses du Larzac producers is to prioritise quality.
To do this, the winemakers limit the quantity of fruit harvested per hectare: the lower the yield, the more flavour concentrated in both the grape and the bottle. Another particularity is that the wide variety of soils found in the region (schist, clay, limestone, pebbles, marl, earth rich of iron oxide, etc.) makes for an extraordinary variation in the profile of the wines. Then, unlike many Languedoc examples, Terrasses du Larzac are not “hot” wines. The vineyards here benefit from cool breezes off the Larzac plateau and Mont Saint-Baudille, which temper the heat of the south of France. The wide diurnal range that results (the difference between day and night time temperatures in the vineyard) means the grapes mature slowly. This helps add aromatic complexity, fruit flavours, freshness and finesse to the finished product.
Terroir is everything.
